Paella Lola
“This is the poor man’s paella. We call it this because it does not have saffron in it. As my dad pointed out, saffron is more expensive than heroin. We didn’t know it was called the poor man’s paella. To us, it was just paella!” - Arleen
"While the directions appeared initially somewhat daunting, the entire process of preparing the recipe was actually fun. I'd never made my own seafood broth before but now I know how. Surprisingly easy. The recipe was very easy to follow. We are pescatarians so especially enjoyed assembling, preparing, cooking and eating the various seafood ingredients. The resulting dish was beautiful. More importantly it was absolutely delicious. And since there are just the two of us, the paella lasted for more than one meal. I would definitely make this dish again. And the dish really was quite affordable living up to the poor man's paella descriptor." - Reciepe review from Thomas P. Culinary Perspectives Book Tester
